I love to eat and I live to eat. Recently or should i say few months ago.. i took an interest in baking. I have always thought baking was damn difficult but there are many simple recipes posted by nice peeps in the blogs so it's kinda of manageable. I seriously don't like to be stressed out while baking so I always opt for simple recipes.

Blueberry Cake with Lemon Streusel

Another cake using buttermilk. Can be for muffin or cake. It's your choice. I simply i love her recipes. I took a pineapple tart recipe from her blog and wah lah.. it turn out fantastic. Thanks gal. As usual i modified a little by reducing sugar and adding more blueberries. I used the rectangle baking tray.
Ingredients [for cake or muffins]
-3 cups of all purpose flour
-1 tbsp baking powder
-1/2 tsp baking soda
-1/2 tsp salt
-1/3 cup unsalted butter,very soft (about 76g)
-1/4 cup vegetable oil
-1 cup sugar
-2 large eggs
- 1 tsp vanilla extract
-1 1/2 cups of buttermilk (about 355ml)
-1 1/2 to 2 cups (fresh or frozen) blueberries (use more if your cake to be bursting with berries. yummy)
Preheat over to 190 degree celsius. In a medium bow, whisk flour, baking powder, baking soda and salt.
In a large bowl, cream together butter and sugar until light. Beat in the eggs one a time, followed by the vegetable oil and the vanilla extract.
Alternate buttermilk and flour into butter mixture, ending with an additional of flour and working in2 or three additions. Stir in blueberries.
Either divide batter into any tray of your preference, you may use muffin cups.
Bake about 20 mins. But it took me 30 mins as it did not comes out clean after 20 mins (time varies).
For the lemon streusel
- zest of 1 lemon
- 6 tbsp granulated sugar
-1/2 of flour
- 5 tbsp warm, melted butter
Mix all and mash with a fork until clumpy. Sprinkle over cake/muffin before baking. Bake till crusty and golden.
